Orange Carrot Walnut Muffins
1/3 cup of Coconut Oil (shortening is also fine)
1/2 cup of brown sugar
2 eggs
1/2 cup of orange juice
1-3/4 cups all purpose flour
1 grated orange peel
1 teaspoon baking soda
1 teaspoon baking powder
1/8 teaspoon all-spice
1/8 teaspoon nutmeg
1 teaspoon vanilla extract
2 cups shredded carrots
1/2 cup raisins
1/2 cup coconut
1 handful of chopped walnuts
Directions:
Preheat oven to 350 degrees.
In a large bowl, cream coconut oil and sugar until light and fluffy. Beat in the eggs, and orange juice. Combine flour, orange peel, baking soda, baking powder, nutmeg, all-spice, and vanilla extract. Add to mixture. Fold in carrots, raisins, coconut, and walnuts.
Grease small or large muffin pan and fill 3/4ths full. (for a small muffin pan-use one tablespoon of the the mixture) Bake at 350 degrees for 10-20 minutes, depending on your oven. Cool for 5 minutes, remove and enjoy!
Alternate Cornmeal muffins method:
Instead of using all-purpose flour, change it out for cornmeal and follow the directions above. This will give you a more chewy and grainy mixture, that is also very delicious.
